原料/調料
材料:
蛋3個,砂糖140g(約10大匙),牛奶5大匙,蜂蜜2小匙,麵粉180g(約16大匙),泡打粉/1小匙。紅豆沙400g。
工具:濾網,電動攪拌器,橡皮刀,平底不沾鍋
1.砂糖用濾網過篩備用。把蛋全部放入盆里,用電動攪拌器打至粗泡,分三次加入砂糖,打至變白且完全打發。加入牛奶與蜂蜜輕輕拌勻
2.混合面粉與泡打粉
3.過篩之後加如蛋糊中,用橡皮刀快速拌勻(用左右與上下方向撥拌,不要用畫圈式,以免出筋)
4.覆蓋保鮮膜,靜置鬆弛半小時
5.平底鍋加熱,舀入一杓麵糊(約2大匙),用中小火煎到麵糊表面產生很多氣泡,然後翻面再煎一會兒即可
6.有餅皮放涼之後就可以夾上豆沙餡了.煎好的餅皮正面是顏色均勻的咖啡色,背面則是米黃色的
