紅油土豆絲

紅油土豆絲是一道菜品,主要食材有土豆、乾椒等,配料是蚝油、辣椒油、麻油等,通過水煮涼拌的做法製作而成。

原料:土豆、乾椒、蒜、鹽、糖、蚝油、辣椒油、麻油、白醋、冰水。

做法:

1、土豆絲洗淨切成薄片,然後切成細絲,入開水中煮3分鐘撈出過涼開水,然後放入冰水中浸片刻,再次撈出瀝乾。

2、乾椒切成絲,蒜拍碎。

3、土豆絲和椒絲、蒜末一同放入大盆,倒入鹽,糖,蚝油,辣椒油,白醋拌勻,靜置入味,最後淋上麻油裝盤即可。麻油後放,香不會跑掉。糖與白醋的比例是1:5,做出的酸辣味比較足,辣椒油可根據個人受辣程度放。
