2、將菠菜汁、胡蘿蔔汁分別加入瓊指30克,並調味入鍋中,煮沸,下火,待涼後,放入零度左右的冰櫃內,冷藏7至8小時,至完全凝固,成魚凍子狀即可取出,用挖球器製成球狀,基圍蝦去殼去沙線,入五成熟的油中,稍炸一下,起鍋、瀝油、調味、待用;

3、將煨好的寶龍球同菠菜球、胡蘿蔔球、基圍蝦一同放放盤中,擺盤,點綴後即可食用。

特點:鮮鹹軟糯,顏色鮮艷。
